We are at home in self isolation at the moment, like many of you. I dont know about you but I find a baked good or a beautifully prepared meal lifts the mood in the home. Here is a fantastically quick and simple snack that can be made for breakfast or morning tea, or even as a side for soups.

This beautiful lady has such a passion for creating good homemade meals to help people in trying times. The global response to the Coronavirus has meant some are at home without the ability to get out and having meals delivered takes away the need to shop and also if unwell the need to cook. So pass on her details to anyone you may know who needs her help. Or how about you give yourself a break and order a meal or two. You will be supporting another small business as well so win win.
Anyway here is my take on this recipe and my tips and adjustments.
The recipe is so basic it is beautiful.
- 1 cup of self- raising flour
- 1 cup of natural greek yoghurt
- plain flour for dusting
- Combine the flour and yogurt and bring together to form a ball.
- Then turn out onto a floured board to knead for 5 – 8 minutes.
- Roll out into a square and then top it with either pizza sauce and cheese, or like these – sweet chilli sauce, cheese and chives. Or add a tablespoon of sugar to the original mix and sprinkle cinnamon and sugar. Dip these in extra sugar. mmmm.
- Pop in the oven at 190 degrees celcius (fan forced) till they are light and golden brown.
Tip here: I found this a very wet dough. I ended up kneading in about an extra 1/4-1/2 cup of flour so it kneaded without sticking to my hands and it keeps its form once cut. So potentially either increase the amount of flour or reduce the amount of yoghurt by about a 1/4 and see how you go.
How good do these look? I tell you now Andrew our son polished this batch off in the day. Yes I managed to get 2, I did tell you they were quick and simple! They go just as quick.
Experiment, play and let the kids get in and make these as well. Come up with weird toppings and tell me what they are….I wouldn’t mind seeing how we could add chocolate at all!
